How to Make Nutella Sandwich French Toast - Video Recipe

I received many requests for french toast, so I decided to arrange it in the way you may like ;)

https://www.youtube.com/watch?v=5Q_UYljqssk

You can use jam instead of nutella, too!!! Or, just soak plain slices of bread to make regular french toasts.

---------------------------------
Nutella Sandwich French Toast

Difficulty: Easy
Time: 45min (incl. soaking time)
Number of servings: 1

Ingredients:
2 slices of bread
nutella (or a jam of your choice)
A
* 1 egg
* 1 tbsp. sugar
* 100ml milk (or almond milk or soy milk)
1 tbsp. butter
vanilla ice cream if you like

Directions:
1. In a flat bowl, beat 1 egg. Add sugar and milk, then mix well.
2. Spread some nutella on a slice of bread and make a sandwich.
3. Soak the sandwich in the egg mixture, flip it over one or two times, for 20 minutes. *if your bread is thick, you can soak it over an hour.
4. Heat butter in a frying pan. Place the sandwich, cover and cook on low for 3 minutes. Flip it over, cover and cook on low for another 3 minutes. *you want to cook on low to cook thoroughly.
5. Cut and serve on a dish. Serve with some ice cream if you like.

How to Make Sushi Burrito - Video Recipe

My darling was reading a newspaper the other day and found "Sushi Burrito" is very popular overseas.

Well… we don't have it in Japan and I never tried it, so I thought it is very weird. BUT my recipe turned out amazing XD

http://www.youtube.com/watch?v=Z1qtIkpVu9Q

Sushi rice gives perfect appetizing flavor over all!!!

It is also perfect for Setsubun (Feb. 3rd)!
http://createeathappy.blogspot.jp/2012/01/lucky-eho-maki-salmon-avocado-alasca.html

The lucky direction of the year 2014 is east-northeast. (2014年の恵方は東北東です!) If you eat Eho-Maki facing in that direction it will bring you a good luck. But just remember you have to close your eyes and eat all without speaking! You can speak after you complete it ;)

Give it a try!!!

---------------------------------
Sushi Burrito

Difficulty: Easy
Time: 15min
Number of servings: 4 rolls

Ingredients:
4 (16cm=6.5inch) flour tortillas
150g (5.3oz.) cooked Japanese rice (short-grain rice)
1 tbsp. Sushi vinegar*
toasted white sesame seeds
lettuce
Shiso leaves (green perilla leaves)
Wasabi Guacamole Japonés (video recipe available)
http://www.youtube.com/watch?v=8T-BKDFuNWw
shredded cheese
chopped green onions

* Ingredients to make sushi vinegar from scratch.
1 tbsp. rice vinegar
1/3 tbsp. sugar
1/3 tsp. salt

Directions:
1. Place cooked Japanese rice in a bowl. Add Sushi vinegar while the rice is hot and slice through rice using rice paddle to separate the grains. Cool the rice before you use.
2. Make Wasabi Guacamole Japonés (video recipe available).
3. Divide the sushi rice into 4 portions. Spread the sushi rice on a flour tortilla using your finger tips, little bit moistened with water. Then sprinkle with toasted white sesame seeds.
4. In the center of the wrapper, layer lettuce, Shiso leaves, Wasabi Guacamole Japonés, shredded cheese, and chopped green onions. Then roll tightly.
5. Wrap with parchment paper to serve.

*If you use large tortillas, you can fold two sides before you roll :)

How to Make Yaki Karē Pan (Baked Japanese Curry Bread) - Video Recipe

Thick leftover curry is perfect for Karē Pan filling!
I recommend this Keema Curry :)

http://www.youtube.com/watch?v=UFXP8eIESv8

Please watch 0:30-2:49 for the basic bread dough.

---------------------------------
Yaki Karē Pan (Baked Japanese Curry Bread)

Difficulty: Medium
Time: 90min-120min
Number of servings: 8

Ingredients:
200g (7.0oz.) bread flour
20g (0.7oz.) butter
1 tbsp. sugar
1 tsp. dry yeast
100ml warm water *30C/86F
20g (0.7oz.) beaten egg
1/2 tsp. salt
A
* 150g (5.3oz.) leftover curry *retort-packed one is OK
* 1 chopped boiled egg
* 25g (0.9oz.) pizza cheese
4 sausages
beaten egg
Panko (bread crumbs)
olive oil if you like

Directions:
((Kneading))
1. You want all the ingredients at room temperature.
2. Mix warm water, salt and beaten egg together.
3. In a large bowl, place bread flour, butter, sugar, and dry yeast. Keep the dry yeast away from butter as the salt (in the butter) will kill the dry yeast.
4. Gradually mix in the warm water mixture. Use your hand to mix together until formed.
5. Transfer the dough to the counter, stretch the dough for a few times using your palms, fold it in half, turn it around (90C), and stretch again. Repeat and knead until smooth, without adding any extra flour for 10-15 minutes). The dough should be very elastic which when stretched becomes almost translucent.
((1st Proving / Proofing / Rising))
6. Lightly oil a large bowl. Form the dough into a ball and place it in the bowl seam side down. Cover the bowl with plastic wrap (to keep the surface of the dough from drying out), and leave to proof in a warm place (30C/86F) for 30-60 min or until it has doubled or tripled in size. (In winter, you can use the proof function on your home oven!)
((Finger Test))
7. Coat your finger in flour and poke the dough. If the hole stays, it's ready. If the dough springs back, it needs to proof more. If the dough shrinks, it is over proofed. In this case, you'd better flatten out and make a pizza…
((Knock-Back & Bench Time / Resting))
8. Place the dough onto a floured surface and punch out the air with your palm.
9. Divide it into 8 equal pieces using a bench scraper or a knife. Quickly form them into balls.
10. Place them on a baking sheet, cover with plastic wrap (to keep the surface of the dough from drying out), and rest for 10 minutes. The dough is surprised because you punched, so please let them rest for a while before you start shaping.
---Up to here, please watch the Burger Buns video (0:30-2:49)---
((Shaping))
11. Cut sausages in half diagonally. Mix A very well. If the curry is too runny, simmer it down until it becomes thick, then cool completely before you use.
12. Flatten out the dough with your hand. Place the curry mixture and sausage, pull and pinch the dough to seal like making a dumpling. Make sure you don't pinch it with curry, otherwise it won't stick together.
13. Dip in beaten egg, and coat with Panko.
((2nd Proving / Proofing / Rising))
14. Place rolls seam-side down on the baking sheet. Cover with plastic wrap (to keep the surface of the dough from drying out), and leave to proof in a warm place (30C/86F) for 20-30 min or until they have doubled in size. (In winter, you can use the proof function on your home oven!)
15. Preheat the oven to 200C (392F).
((Baking))
16. Sprinkle with olive oil if you like.
17. Bake at 200C (392F) for about 10 minutes. OR Deep fry in oil at 170C (338F) for about 5 minutes until golden brown.

* To keep the surface of the dough from drying out, a wet towel is okay but plastic wrap is easier!

* This recipe is for 8, so make 4 Kare Pan and 4 Ham and Corn Buns to enjoy 2 flavors at once!

How to Make MILO Bagels - Video Recipe

Soft and chewy with a slightly sweet MILO flavor! Yummy XD

http://www.youtube.com/watch?v=GvMX8RbJ96A

It goes great with Anko (sweet Azuki red bean paste)!!!
Also ham and cheese surprisingly match well. hehe

---------------------------------
How to Make MILO Bagels

Difficulty: Easy
Time: 40min
Number of servings: 2

Ingredients:
180g (6.4oz.) bread flour
50g (1.8oz.) Nestle MILO
1/2 tsp. dry yeast
1/4 tsp. salt
120ml warm water

Directions:
1. Place bread flour, MILO, dry yeast in a large bowl. Add warm water (38C-40C=100F-104F) and roughly mix the ingredients. Then add salt and knead for about 5 minutes until the dough is uniform and smooth. (You can knead the dough on the counter. Salt controls the rising, so it is better added later. If your dough is too soft, add little more flour. But it is better soft than stiff to get them incorporated. Adding water later won't mix well…)
2. Divide the dough into 2 portions and shape into balls. Wrap each in plastic wrap and let rest for 5 minutes. (Meanwhile, you can wash dishes.)
3. Roll out the dough into a rectangular shape. Fold bottom up twice, leaving one side open. Wrap around the other side with the open side to form a doughnut shape, sealing the ends securely.
4. Wrap in plastic wrap again and let rest for 10 minutes. Meanwhile, preheat oven to 428F (220C). Bring a large pot of water to a boil
5. Add 1 tbsp. of honey in a boiling water (it gives the bagels a nice shine). Cook for about 1 minute on each side until the bagels have a shriveled look. Then immediately remove to the baking sheet lined with aluminum foil or parchment paper, and bake at 428F (220C) for 15 minutes.

Wrap bagels in aluminum foil to keep them moist. They stay soft and chewy till the next day!

Tsubu-an (sweet Azuki red bean paste with skins) goes great with MILO bagels :D

Afternoon Tea Sandwiches (Chicken Egg & BLT) - Video Recipe

In this video, I will show you how to make Chicken Egg sandwich and BLT sandwich for afternoon tea time :)

http://www.youtube.com/watch?v=flfLCoLHm2k

Easy and delicious!!!

---------------------------------
Afternoon Tea Sandwiches (Chicken Egg & BLT)

Difficulty: Easy
Time: 30min
Number of servings: 4 people

Ingredients:
((Chicken Egg Sandwich))
120g (4.2oz.) chicken breast
100g (3.5oz.) potato
1 hard-boiled egg
A
* 3 tbsp. mayonnaise
* 1 tsp. whole-grain mustard
* salt and pepper
8 slices rye bread
((BLT Sandwich))
6 bacon strips
1 tomato
4-8 leaves iceberg lettuce
A
* 1 tbsp. ketchup
* 1/2 tbsp. Worcestershire sauce
mayonnaise
8 slices white bread

Directions:
((Chicken Egg Sandwich))
1. Cut the chicken breast into chunks. Peel and slice the potato into round slices. Place them on a microwavable dish, season with salt and pepper, cover with plastic wrap, and cook in the microwave for 4-5 minutes (500w). When you uncover, be careful as steam and water are very hot.
2. Mash the potato slices with a fork while they are hot. Allow to cool the chicken breast and shred with your hands. Chop the hard-boiled egg.
3. Mix A in a bowl, add (2.), and mix well.
4. Spread 1/4 of the mixture on a slice of bread. Then top with another slice of bread.
5. Cut off the crusts and cut each sandwich into fingers.
((BLT Sandwich))
1. Cut bacon strips into halves. In a pan, fry bacon until crispy (until it reaches the crispiness you want), then drain on paper towels. Slice the tomato and remove the seeds.
2. Spread some mayonnaise on 4 slices of bread. Spread some A on the other 4 slices of bread.
3. Place lettuce leaves on a mayo-spreaded bread. Then place a sliced tomato and bacon strips. Top with a ketchup mixture-spreaded bread.
4. Cut off the crusts and cut each sandwich into fingers.

You can spread some softened butter on your bread if you like. But I don't like it… haha

Curry and Rice Bread (Using a Bread Machine) - Video Recipe

This video will show you how to bake Curry and Rice Bread using a Home Bakery (Bread Machine or Bread Maker): Panasonic SD-BH104

http://www.youtube.com/watch?v=HlCGxaih-LE

Adding a bowl of cooked rice makes the bread moist and gives it a slightly chewy texture. Yummy!!!

I hope you enjoy this idea :)

---------------------------------
Curry and Rice Bread

Difficulty: Very Easy
Time: 4 hours
Number of servings: 1 loaf (6 slices)
Calories per slice: 260cal

Necessary Equipment:
Panasonic SD-BH104
http://ctlg.panasonic.jp/product/info.do?pg=04&hb=SD-BH104

Ingredients:
210g (7.4oz.) bread flour (hard flour or strong flour)
2 tbsp. sugar
1 tbsp. powdered milk (dried milk)
1 tsp. salt
5g (0.18oz.) curry powder
1/2 tsp. black pepper
150g (5.3oz.) cold cooked white rice
20g (0.7oz.) butter
30g (1.0oz.) diced processed cheese
130ml water
3/4 tsp. dry yeast
* 40g (1.4oz.) diced potatoes
* 30g (1.0oz.) diced carrots
* 30g (1.0oz.) sliced bacon strips

Directions:
1. Not to make a mistake, measure all the ingredients in advance with a measuring cup and measuring spoon. If you make a mistake, you will waste 4 hours baking the bread. (Measuring cup and measuring spoon come with the bread machine.) Or, you want to remember where you are up to if anyone talked to you while placing the ingredients.
2. Bring a pot of water to a boil. Cook diced potatoes and carrots al dente, then drain well.
3. Remove the bread pan (twist the bread pan anti-clockwise and lift up to remove) and set the kneading blade. Make sure that they are clean before you use.
4. Place and pile up the bread flour, sugar, powdered milk, salt, curry powder, black pepper, cold cooked white rice, butter, and diced processed cheese in the middle of the bread pan. Then pour in the water around the pile. Wipe the outside of the pan to remove any flour or liquid.
5. Put the bread pan into the bread machine and turn slightly clockwise.
6. Close the lid.
7. Open the upper lid and place the dry yeast in the dry yeast dispenser. It will add the dry yeast automatically. Wipe if it's wet but avoid generating the static electricity.
8. Choose the "Gohan" baking option. Select the "Gohan" bread type. Select the "Raisin" mode with a note: extra ingredients can be added directly into the bread pan when the beep sounds. Start the machine.
9. When the machine beeps, add extra the ingredients: diced potatoes, diced carrots, and sliced bacon strips. The machine automatically starts after 3 minutes.
10. When it's done, press stop and remove the bread pan from the bread machine immediately. Leave to cool on a kitchen cloth for 2 minutes. Then remove the bread from the bread pan and allow to cool on a wire rack. Remove the blade if the blade got stuck in the bread.

Note: You can only place dry ingredients (e.g. dried fruit, nuts) in the raisin dispenser.

Have you seen “Ratatouille"? It is a movie released in 2007.

There was a contest related to this movie at that time and my "Ratatouille Pizza" won the Second Prize!

http://www.youtube.com/watch?v=HWqQ2An2ncU

It is juicy, healthy, tasty and delicious!

You can use pre-made pizza dough, but if you want to make it from scratch, here is my pizza dough recipe!

Katsu Sando (BEST Tonkatsu Sandwich Recipe) - Video Recipe

Katsu Sando is Cutlet Sandwich. It is perfect for Bento (lunchbox item) and potluck parties, too!

Katsu Sando Tonkatsu Sandwich
https://www.youtube.com/watch?v=AmkdRm85kGU

Instead of using boneless pork chops, I used thinly sliced pork! In this way, you don't have to pound the meat to tenderize ;D

---------------------------------
Katsu Sando

Difficulty: Easy
Time: 25min
Number of servings: 2

Ingredients:
((Tonkatsu))
8 thinly sliced pork
salt and ground black pepper
* flour
* beaten egg
* Panko (bread crumbs)
vegetable oil for deep frying
((Katsu Sando))
2 Tonkatsu
4 slices of bread
butter
whole-grain mustard
shredded cabbage
Tonkatsu sauce

Directions:
((Tonkatsu))
1. Layer 4 slices of pork to make 1 Tonkatsu and season both sides with salt and pepper.
2. Flour the pork lightly, dip in beaten egg, then coat with Panko. Use one hand for coating flour and Panko, and use the other to dip in egg to keep one of your hands dry.
3. Deep fry them in oil at 170C (340F) until thoroughly cooked golden brown. (Turn the pork over to cook evenly.) Remove the Tonkatsu from the oil and drain.
((Katsu Sando))
1. Brush one side of 4 slices of bread with butter. Brush one side of 2 slices of bread with whole-grain mustard. (You can toast the bread if you like.)
2. Sandwich the Tonkatsu with shredded cabbage and tonkatsu sauce.
3. Cut into 2-3 pieces. You can cut off the crusts if you prefer. Mostly the crusts are off when sold at stores in Japan.
